Two things I know are crucial: a very hot oven and consuming them while still warm. Business is always at a fever pitch at the confeitaría, that the stash of pastéis never has a chance to get cold, as they do in other places, such as A Brasileira or Nicola.</description>

Have you ever heard about research done by an Italian institute (in Milan) where they found out the ingredients and proportion of the Pasteis de Belém? This is not confirmed info from wikipedia. I would also like to know the original recipe : )
