Pimm’s No. 1 is a gin-based beverage popular in Great Britain. This is a great, refreshing summer cocktail. Traditionally, it is served with just a floating cucumber, but many variations include seasonal fruit. I prefer to shake everything together to impart more of the fruit, cucumber, and mint flavor into the drink. Feel free to add an additional garnish, if desired.—Kim Haasarud

convert Ingredients
4 ounces lemonade
2 ounces Pimm’s No. 1
1 to 3 cucumber slices
Optional fruit: 2 orange wheels, 2 lemon wheels, 2 apple slices
Ginger ale, as needed
Mint sprig, for garnish

Method
1. Combine the lemonade, Pimm’s, cucumber slices, and fruit, if desired, in a cocktail shaker with ice. Shake moderately and pour into a large glass.

2. Top with a splash of ginger ale and garnish with a mint sprig.

3. This recipe can be multiplied by six and made in a pitcher.
