So, to be faithful to the recipe, buy ground pork with enough fat to help the meatballs stay moist. The lemon scent and flavor managed to hang on after the meatballs were cooked, while the herbs and the heat from the chili added more dimension. These ingredients set the meatballs apart from the usual Italian ones, and at the same time, they make the leftovers very versatile—especially when assembling dinner using leftovers from multiple meals (we all do it, don’t we?). Quite honestly, I didn’t think the meatballs needed to be served with guacamole or any dipping sauce as they were plenty flavorful, but if you make it to cool the spices in the meatballs (as the recipe explains), I’d skip the chili pepper.</description>
