		<description>Trish, I&#039;m sorry you weren&#039;t happy with the cupcakes. The recipe looks fairly well-balanced, but the quantity of whites could be just a little bit high which might be the cause of a slightly dry cupcake.  A second possibility is that the whites were beaten more than to the soft peak stage which is called for in the recipe.  Finally, using water, as opposed to milk, would make the cake drier too.
 
I have no good idea about the flavor of the pastry flour. Pastry flour really shouldn&#039;t have an overwhelming flavor unless perhaps you used whole wheat, which is often what&#039;s available in supermarkets.  What brand did you used?

		<description>I found these a little dry. I also found the flavor of the pastry flour overwhelmed the vanilla. The cupcakes were tender and had a good texture, but there are better and easier ways to make a good vanilla cupcake.</description>
