Love the strategic thinking, Amy. Love it. Do let us know if you can discern a difference when you try it with the almond paste...

I couldn't find almond paste in the store I go to, so I used marzipan instead. I know marzipan has more sugar, so I added only 1/2 cup of sugar to the batter instead of one cup. They turned out wonderfully! I will make this recipe again with almond paste after this batch gets eaten and I will see if they turn out better or the same.

Charles, I agree. These are great cookies, and one of the most popular cookie on the blog. Merry Christmas and Happy New Year!

By far the best cookies I've ever made. They're always a hit and have become a Christmas traition. People start asking weeks in advance when I'll be making them. Advice - make several batches. They'll be gone before you know it.

I have to say that I made these cookies last Christmas for the first time. They were so fantastically good, that I will NEVER EVEN TRY another rainbow cookie recipe again. :-) Moist, dense, almond-redolent, with just the right balance of chocolate, these taste like a million bucks. Thank you for the recipe. I grew up in New York City, and had many different kinds of rainbow cookies over the years, these rival the best I ever had in my childhood from a local bakery.

It's a lot of work, but SO worth it!!!

I agree Paula, and guests have to be flattered by the amount of work a baker puts into this cookie. Also, kudos to Duane Winfield for the fabulous image he created.

I have looked for a good rainbow cookie recipe for quite a while. This one is GREAT! Seriously. These cookies tasted just like they came from a New York bakery. I served them at Easter this year, and they were a huge hit. Yes, they're a lot of work, but it's definitely worth it. The only thing I would change (if I changed anything) would be to coat the bottom with chocolate, as well as the top and sides. They also get better when left to settle for a few days.
