		<description>Hi Terri, I checked the recipe against the original, and it&#039;s correct. I also checked it against similar recipes, and none have butter. A few things come to mind: 

1. Is your candy thermometer correct? You can test this by bringing a pot of water to a boil. The thermometer should read precisely 212°F. 
2. Cooking the mixture too long (in essence, removing too much water from the candy, can make a difference). 

I&#039;m going to try to contact the co-author and see if she has any suggestions. We always work to try and minimize or eliminate any problem in a recipe, as we know how expensive some of them can be.</description>

		<description>I&#039;m a huge fan of Chef Payard, but was really disappointed with this recipe. The toffee is simply not crunchy, it&#039;s impossible to eat it&#039;s that hard. I&#039;m thinking there should be butter in the recipe, and this was possibly left out?  I made the candy to send to family in CA for Christmas, and it is beautiful to look at, but that&#039;s it. Chef must have incredibly strong teeth!</description>
