		<description>Caul fat is a a lacey white &quot;net&quot; that covers the intestines in the pig.  The butcher needs to know at the time of the slaughter of the pig that you want the caul fat reserved, otherwise it will be thrown out along with the other discarded internal organs. You should be able to get it from any butcher that slaughters pigs. Google something like &quot;custom meat processing&quot; for your area. If you can&#039;t find caul fat, you could instead use thin slices of fat back or even bacon (soak first to remove the excess salt). Another option is to just use professional-kitchen-quality plastic wrap to line the loaf pan and fold it over the top of the pate.  Hope this is helpful!</description>
