Pam Corbin is a jam maker with over 20 years of experience and the author of Preserves and The River Cottage Preserves Handbook. She and her husband bought a small jam factory in Devon, England and made jam with seasonal ingredients under their own label, Thursday Cottage. Although they sold the factory in 2002, Corbin continues to host jam-making workshops in the UK.
