Paula Lambert

Paula Lambert is a cheesemaker and the founder of the Mozzarella Company in Dallas, TX. She’s been inducted into the James Beard Foundation’s “Who’s Who of Food and Beverage in America” and is the author of The Cheese Lover’s Cookbook and Guide and Cheese, Glorious Cheese. She also teaches cheesemaking classes and guides trips to Italy for cheese lovers.
