Nate Appleman

Nate Appleman is the culinary manager of Chipotle Mexican Grill, spearheading research and development. He was previously at the helm of A16 and SPQR in San Francisco and was named Rising Star Chef by the James Beard Foundation. A graduate of the Culinary Institute of America, he went to Florence, Italy for six months to learn the art of butchery and salumi. A16: Food + Wine is his first cookbook.
