Poached chicken, cabbage strips, carrot slivers, and Vietnamese coriander are tossed in a classic Vietnamese lime dressing. A great outdoor salad.

Robert Danhi is a chef and food writer specializing in Southeast Asian cuisine. A graduate of The Culinary Institute of America, he returned as a faculty member in 1998.
