Based in Kent, England, Wild at Heart produces a range of award-winning jellies, relishes, and fruit cheeses using traditional recipes and wild, native, and ancient strains of fruits. Founders Ginny Knox and Caro Willson work in small batches, spending their autumns picking fruit until they can barely move and their winters boiling away like witches at their cauldrons. The Hedgerow Cookbook is their first book.
