Peanut Butter, Honey, and Arugula Sandwich

Peanut Butter, Honey, and Arugula Sandwich

Simple honey drizzles are perfect for spicing up your daily meals using ingredients you already have in your cupboard. There’s much more to honey than a sweet taste. Every honey has its own unique flavor profile, bursting with the characteristics of its terroir. The secret to pairing these sweet and savory combinations lies in exploring the wide varieties of flavors and textures and then coming up with a combination that is balanced and pleasing to your palate. It’s easy to recognize when you have created a harmonious pairing. Think about the taste equation of one plus one equals three in your mouth, meaning that the combination will create a synergy of flavors that is far grander than the flavors of the individual parts.–C. Marina Marchese and Kim Flottum

LC But That's Not All... Note

We all know the comfort of a peanut butter and jelly sandwich, yes? And some of us know the slightly more, uh, dare we say it, sophisticated pleasure derived from a peanut butter and honey sandwich. This particular peanut butter and honey sandwich that’s gilded with peppery arugula illustrates an ingenious use for a drizzle of honey. In their indispensable and encyclopedic book, The Honey Connoisseur, authors C. Marina Marchese and Kim Flottum mention several others, mostly fast fixes requiring nothing more than a quick dribble of honey and the slight whisking of ingredients. Tweak the amounts as you please:

Honey and olive oil (toss with leafy green salads or fruit salads)
Honey and balsamic vinegar (goes lovely with sliced strawberries)
Honey and mustard (use as something in which to dip and dunk your fried chicken)
Honey and barbecue sauce (slather it on ribs and burgers and pork chops and chicken and…)

Toasted multigrain sourdough + creamy, salted, organic peanut butter + honey + baby arugula = one fine sandwich. Funny, this sandwich came along just a few weeks after some friends packed up a peanut butter and romaine lettuce sandwich on untoasted bread for me before I had to travel by air. That was also delicious, but the bite of baby arugula really rounds out the flavor profile in a way that fairly bland but crunchy romaine did not. Having added baby arugula, I now would like to sub fully mature arugula as it adds more bite, and sub out almond butter for the peanut butter to complement the Italian nature of the arugula. I think it’ll be the perfect sandwich.

This is an interesting sandwich, just not for your PB&J purist. It’s reminiscent of a sandwich my Mom made when I was a kid. Back then it wasn’t unusual for lettuce to be added to a peanut butter and honey sandwich. The arugula adds a subtle peppery bite to the sweetness of the honey and offsets the richness of the peanut butter. The reaction of several of my tasters was to take a pass on this, but I enjoyed the taste and texture of the sandwich. This would be a nice nostalgic sammie for those children of the ‘60s and ‘70s. I think this would work just as well with differing types of lettuce like mache, endive, or frisée, as well as your standard lettuces.
