  • 1/2 cup plain whole milk yogurt
  • 2 teaspoons sugar or honey
  • Juice from 1/2 lemon
  • 1/2 teaspoon finely grated ginger
  • 4 1 1/4 lbs unripe peaches peeled and cut into 1/8-inch (3-mm) julienne
  • Salt and freshly ground black pepper to taste


  • To make the peach slaw, in a medium bowl, combine the yogurt, sugar or honey, lemon juice, and ginger.
  • Add the peaches and salt and pepper to taste and toss gently.
  • Cover and refrigerate for at least 2 hours and preferably overnight.
  • Drain off any liquid that accumulates and stir gently to recombine prior to serving.
