Charlie Trotter

Charlie Trotter was a chef and restaurateur who opened his first eponymous restaurant, Charlie Trotter’s, in Chicago in 1987. He later opened restaurants in Las Vegas and Mexico. Trotter also hosted the PBS cooking show, The Kitchen Sessions with Charlie Trotter, and over his lifetime wrote more than 10 cookbooks. He was named Humanitarian of the Year by IACP in 2004 and the James Beard Foundation in 2012. Trotter passed away in 2013. @CTrotters

Olive Oil-Poached Cod

The cod, once poached in olive oil, is supple and utterly delicious. It sits on a bed of roasted tomatoes and broccoli rabe, which adds acid to the dish.
