About Pam Henderson

Professionally, Pam is a Lecturer at the University of Kentucky, but when she is not teaching, you can typically find her in the kitchen. She is an enthusiastic home cook and slowly becoming more of a baker as well. Her love of cooking and food began at early age but really started to develop more after watching (probably too many) Food Network shows. She has a small collection of cookbooks which she reads for fun and is an active participant in both online and in-person cookbook clubs. She is a recipe tester for this site and has done recipe testing for America’s Test Kitchen as well. The best part about cooking as much as she does is that there is typically always something delicious to eat!

We’ll demolish almost any version of peanut butter cookies. But these, with their slightly crisp edges and oh-so-soft, melt-in-your-mouth center, are among the best we’ve ever experienced.
