Variation: Green Pasta
Cook 8 ounces of frozen or 12 ounces fresh spinach in salted boiling water until tender. Drain and set aside to cool. When cool, use your hands to squeeze out as much water as possible. Chop the spinach finely by hand or in a food processor, then proceed as instructed in step 5, adding the spinach with the eggs, and using an extra 1/2 cup of flour.
