Ingredients

  • 1 to 3 tablespoons fresh lemon juice, (from 1 small lemon)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon granulated sugar
  • 6 tablespoons olive oil
  • salt, to taste
  • finely chopped chives, (optional)

Instructions

  • Pour the 1 to 3 tablespoons fresh lemon juice into a small bowl. Whisk in the 1 teaspoon Dijon mustard and 1 teaspoon granulated sugar.
  • Drizzle in the 6 tablespoons olive oil whisking constantly, until the lemon vinaigrette is shiny and smooth.
  • Stir in salt to taste and, if you’re feeling fancy, finely chopped chives. Dribble the lemon vinaigrette over anything and everything you please.
