Butterscotch Beer

Ingredients

  • 1 stick (4 oz) unsalted butter
  • 1 cup brown sugar
  • 1 teaspoon kosher salt
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream
  • 2 1/2 cups lemon-lime soda
  • Ice

Instructions

  • In a medium saucepan over medium-low heat, melt butter.
  • When the butter is melted, add brown sugar, salt, and vanilla extract. Whisk to combine.
  • Cook mixture, stirring frequently, until the brown sugar is completely dissolved, 5 to 7 minutes.
  • Whisk in the heavy whipping cream and continue to cook for 1 minute more.
  • Allow mixture to cool to room temperature, 15 to 30 minutes.
  • Fill 8 large glasses halfway with ice. When cool, divvy mixture between the glasses.
  • Slowly top with soda, be careful not to overfill, as the mixture will bubble and foam! Stir to blend and enjoy.
