*What can I substitute for beef shank?
Beef shank is a part of the steer's leg and because of that, it's a tougher cut of meat. Often dry and sinewy, it lends itself to long braises and stews like osso bucco and beef Bourguignon. As well, it may still have the bone attached, making it an excellent choice for stock. If you can't find a beef shank, you can get the same texture and rich beefy flavor with another lean cut like flank or chuck.
