Jay Bentley is the founder and owner of The Mint Bar and Café in Belgrade, MT, Prior to opening the restaurant more than 15 years ago he trained under chef Daniel Bonnot of Louis XVI in New Orleans. Patrick Dillon is a Pulitzer Prize-winning non-fiction writer, author, and editor who also operates a California winery. Open Range is their first cookbook.
