Erin Bloys

Erin comes from a long line and a large family of excellent Southern cooks. She was born in Jacksonville, Florida, and grew up in Warren, New Jersey. She currently lives in Bethlehem, Pennsylvania, with her non-food loving husband (he eats merely to survive), her three daughters, two food-obsessed Labrador retrievers, and two vocal sister cats.

After finishing an undergraduate degree in psychology, she followed her passion and attended Le Cordon Bleu in London. Upon returning to the U.S., she began working as a caterer, a career that brought her great joy for 25 years until the pandemic closed her company in 2020.

She has developed recipes and created content for Eat This Not That magazine and its accompanying cookbooks. Now, she finds joy in tending her garden, cooking for family, entertaining at home, and foisting her weekly sourdough bakes upon her friends… because she can’t trust herself to have them in the house without eating entire loaves!

She’s been testing recipes for Leite’s Culinaria for several years and loves finding gems amongst each new batch of recipes. She believes that recipe testing requires a level of discipline in cooking that she’d otherwise forgo; she is a constant recipe tinkerer in everyday life. The rigor of testing for LC has been challenging and fulfilling, and she loves that it often leads her outside of her comfort zone and on to new discoveries.

Hazelnut Pistachio Chocolate Bark

It's time to melt some chocolate, toast some nuts, and cross some names off your holiday gift list.

Rigatoni with Tomatoes, Eggplant, and Mozzarella

Jumble together pasta, tomatoes, eggplant, ooey gooey mozzarella, and a splash of cream in just 35 minutes. Jamie Oliver's quick pasta dinner also makes a mean casserole.

Caçoila ~ Portuguese Stewed Beef

A Portuguese classic made with beef and peppers, caçoila de Pico is a slowly simmered affair that's well worth the wait.
