Buddha-ful Beet Juice

This Buddha-ful beet juice might not actually promise to calm your monkey mind but it does go a long way to calm your hungry monkey tummy. Made with earthy beets, sweet apple, tangy lime, and herby cilantro, it’s refreshment at its finest.

Earthiness in abundance! I absolutely adore beet juice. Its subtle sweetness and earthy tones create a wonderful drink and when paired with herbs, as in this recipe, it can’t be beet! Whoops—I meant beat. No I didn’t.–Emily von Euw

LC Buddha-Ful Note

The author refers to this beet juice recipe as “Buddha-ful.” Hmm. We’re guessing Buddha enters the equation via that whole mindfulness thing and drawing satiety from the simplest of pleasures. And we’re all for that. Just like we’re all for this stunning elixir of beet and apple. Try it and see if you agree.

I love the flavor combo in this smoothie–earthy, sweet, tangy. Beets give it a stunning color and the cilantro's brightness adds a serious flavor boost.

Recipe Testers’ Reviews

What an unexpected burst of flavors from this beet juice recipe! I will admit, I juice quite often, and this combination of ingredients sounded quite unusual, and I wasnt sure it would taste good, but this makes a wonderfully bright-flavored juice. Apples and beets make the juice sweet, so overall this is a sweet deep magenta-colored juice, and the cilantro actually works. When I put the glass to my lips, I actually smelled the cilantro before I tasted it. I’ve never quite consumed cilantro this way, but I loved it!

I have to admit, not being a beet lover, this beet juice recipe is amazing! I always taste too much beet in juices. The lime and cilantro did an amazing job balancing the bitterness from the beets. My hubby loved it, too, and my 10-year-old said “Not bad!” It’s good! It’s very good! I’ll definitely have this juice again and again. I liked it very much!
