Buddha-ful Beet Juice

Ingredients
- 3 smallish red beets rinsed, peeled, and coarsely chopped
- 1 apple (any type) rinsed and coarsely chopped
- 1 lime halved and seeded
- 1 cup loosely packed cilantro leaves
Directions
- Put everything through your juicer, going slowly with the beets because they’re very dense. Pour the beet juice into a glass and sip, slurp, and savor away.

What an unexpected burst of flavors from this beet juice recipe! I will admit, I juice quite often, and this combination of ingredients sounded quite unusual, and I wasnt sure it would taste good, but this makes a wonderfully bright-flavored juice. Apples and beets make the juice sweet, so overall this is a sweet deep magenta-colored juice, and the cilantro actually works. When I put the glass to my lips, I actually smelled the cilantro before I tasted it. I’ve never quite consumed cilantro this way, but I loved it!
I have to admit, not being a beet lover, this beet juice recipe is amazing! I always taste too much beet in juices. The lime and cilantro did an amazing job balancing the bitterness from the beets. My hubby loved it, too, and my 10-year-old said “Not bad!” It’s good! It’s very good! I’ll definitely have this juice again and again. I liked it very much!
