Casseroles are the original one-pot meal. Think about it, in one dish you can have your proteins, carbs, and vegetables. All you have to do is toss it in the oven and wait. (Well, that’s the hard part.)
They’re ideal because they can work for weeknights and weekends. For family and company. A frozen casserole can make it to the table in under an hour. It doesn’t get much easier than that.
There are a lot of them. First, you can never go wrong with Ina Garten or her Baked Pasta with Tomatoes & Eggplant. Simple, easy, and relatively healthy. We have the classics, too, like Green Bean Casserole, and a good old tetrazzini.
